Fish in a Tomato & Basil Cream
Ingredients:
800g skinned white fish fillets
1 medium onion, finely chopped
2 cloves garlic, crushed
5 tomatoes blanched and peeled
8T chopped basil leaves
½ cup cream
Grated Parmesan cheese for topping
Method:
Brush the fish fillets with olive oil, place in a baking dish, bake at 180deg C about 5 minutes.
Meanwhile, make the sauce: heat 2T cooking oil, sauté the onion and garlic, add the tomatoes, then cover and simmer gently on very low heat for 20 minutes, stirring occasionally.
Remove from the heat, add the basil and cream. Pour the sauce over the fish, sprinkle with grated Parmesan cheese and return to the oven till bubbling and the cheese has melted.
Serve over Freshly chopped green spinach
